The Local Batch Sashays onto the Marketplace!
Feb. 21, 2021
The wholesome Benchmark cookie marries modern simplicity with old fashioned know how producing a truly unique and delicious chocolate delight. Each ingredient is used in its form closest to nature and is minimally processed.
Organic wheat berries are milled right before baking to retain all of their natural nutrition. The butter comes from upstate New York dairy farms where cows graze and only eat grass, as nature designed them to. The sugar is pure dehydrated cane juice. The naturally occurring nutrition and minerals in the molasses component of the sugar remain and enhances its flavor.
The vanilla is made from Madagascar Bourbon beans. The whole bean, not just the inside particles, is sun dried and then ground into a fine powder that elevates the flavor and preciousness of these morsels. We use pastured eggs from the Queens County Farm Museum shop when available and unrefined salt. Even the baking soda we use is specially chosen because it is extracted without chemicals. This level of purity is our benchmark ethos and our Benchmark cookie is its physical manifestation.
Many people search for a nourishing high quality, great tasting treat that fits their lifestyle. Food label requirements cover the basics but for many foodies, concerned parents and interested consumers, they don't offer the transparency needed to help them discern a product's value.
To address these concerns, The Local Batch put a QR code on their label that will take customers to the ingredient page on their website and see who the actual suppliers are and learn more about each ingredient choice.
"This is our commitment to transparency and expression of quality. Every ingredient and even the packaging was selected considering its wholesomeness and origins, not price. These cookies are my art in an edible form, consumable goodness” says Carol Khairallah, founder and artisan baker of The Local Batch, LLC. “Since the 70's I have often thought about bringing the fruits of my baking passion to the marketplace and now I am thrilled to breathe life into this dream!”
One customer described their encounter with the benchmark cookie in this way: “When I took that first bite, I thought to myself, wow, now that is really something fantastically different with delicious flavors and textures all over the place. I loved it!”
The Local Batch Benchmark Cookie plans to be sold in shops that carry nature based products, Taste New York shops, various fairs and farmers markets as well as specialty museum shops and cafes.
